Japanese cuisine is deeply regional, and this journey offers a delicious introduction to the changing flavours of central Japan. Beginning near the Sea of Japan, expect exceptionally fresh seafood before riding into Nagano, where mountain specialities include handmade soba noodles, oyaki dumplings and seasonal produce from the surrounding valleys. Around Matsumoto and Yatsugatake, meals highlight the clean, delicate flavours of the Japanese Alps, while Yamanashi is known for hōtō, a warming local noodle dish served with vegetables in a rich miso broth.

Traditional multi-course dinners at ryokans showcase beautifully presented seasonal ingredients, followed by classic Japanese breakfasts the next morning. As the tour continues around Mount Fuji, Hakone and the Izu Peninsula, the cuisine shifts towards coastal flavours, including locally caught fish, sashimi and regional specialities shaped by the land and sea.

Rising 3,776 metres above central Japan, Mount Fuji is the country’s highest peak and one of its most enduring cultural symbols. Formed through repeated volcanic eruptions over hundreds of thousands of years, Fuji remains an active stratovolcano, although its last eruption occurred in 1707.

For centuries, the mountain has been revered as sacred ground. In Shinto belief, it is associated with powerful kami, while pilgrims have long followed ancient routes to its summit. Its near-perfect form has inspired generations of artists, poets and travellers, most famously appearing in the woodblock prints of Hokusai and Hiroshige.

In 2013, Mount Fuji was designated a UNESCO World Heritage Site for its cultural significance, including the shrines, pilgrimage routes and landscapes connected to it.

Throughout this journey, riders experience Fuji as people in Japan have for centuries, first as a distant presence, then from its surrounding lakes, forests and mountain roads. Cycling around its base and climbing the Subaru Line to the 5th Station offers an intimate sense of its scale and changing character. More than a magnificent mountain, Fuji represents something distinctly Japanese: the meeting of nature, spirituality, beauty and tradition.
